Ingredients for Kofta
Boiled Potatao (Mashed) 1 (1 cup
after mashing)
Crumbled Paneer (cottage cheese) 1
Cup
Finely Chopped Green chillies 2
Finely chopped Ginger 1 inch
Salt to taste
Redchilli Powder ½ tsp
Garam masala ½ tsp
Corn flour 1 tablespoon for binding
Chopped cashews 4-5 (optional)
Raisins 7-8 (optional)
Oil for Deep frying
For Gravy
Oil 7-8 tablespoons
Bay leaf 1
Cinnamon stick 1
Black cardamom 1
Black pepper corn 4-5
Laung cloves 4-5
Cumin seeds 1 tsp
Roughly chopped onions 2
Roughly chopped ginger ½ inch
Roughly chopped garlic 7-8
Roughly chopped tomatoes 4
Cashews 7-8
Roughly chopped Green chillies 2
Butter 1 Tablespoon
Kashmiri redchilli powder 1 tsp
Redchilli powder 1 tsp
Garam masala 1 tsp
Sugar 1 tsp
Crushed Dry fenugreek leaves 1 tsp
Water ¼ cup or as required
Method of Making Kofta
Step 1:- In a bowl mix boiled and
mashed potato,cottage cheese(paneer) ,green chillies,ginger,salt,redchilli
powder,garam masala and corn flour
Step 2:- Now take a small portion of
the dough flatten it and fill few dry fruits in between and pack it and make a
ball
Step 3:-Deep fry these koftas in hot
oil on high flame till they turn golden
Step 4:- when its done take them
out..Koftas are ready keep them aside
Method of Making Gravy
Step 1:- Take oil in a pan ,now on
low flame add bay leaf,cinnamon stick,black cardamom ,black pepper corn,laung
cloves and cumin seeds,let them cook on low flame for 10 seconds
Step 2:- Turn the flame on medium and
add onions let them cook for 2-3 minutes
Step 3:- After 2 minutes add ginger
and garlic and cook again for 2-3 minutes
Step 4:- Now add tomatoes,green
chillies and cashews ,cover and cook for 3-4 minutes or till the tomatoes get
soft and mashy
Step 5:- When tomatoes gets
meshy..switch off the flame and remove bay leaf,cinnamon stick and black
cardamom from the mixture and let the mixture cool down completely
Step 6:- Now blend the mixture in a
jar make a fine paste out of it
Step 7:- Now in the same pan take butter
,Kashmiri redchilli powder and dry fenugreek leaves cook for 10 seconds low
flame
Step 8:- add onion tomato paste mix
well
Step 9:- Add salt,redchilli powder
and sugar followed by water mix..now cover and cook for 2 minutes on low flame.
Step 10:- After 2 minutes add garam
masala followed by fresh cream and switch off the flame
Tips :-
>> The quantity of mashed
potatoes and paneer will be the same eg:- 1 cup of mashed potato and 1 cup of
crumbled paneer
>> Ratio of onion and tomatoes
will be 1:2 Eg :- 2 onions and 4 tomatoes
>> Switch off the flame as soon
as you add cream
>> Add koftas only when you
have to serve
